Panchagavya — from *pancha* (five) and *gavya* (of the cow) — refers to the five products of the cow that Indian tradition holds sacred: milk, ghee, curd, gaumutra and dung. Together they run through Ayurveda, temple ritual and, increasingly, modern organic farming. This is a plain guide to each of the five, how they are used, and why the breed of cow behind them matters.
The five products
- Milk (dugdha). The foundation. From indigenous cows this is A2 Gir cow milk — raw, unhomogenised, valued for its A2 protein.
- Ghee (ghrita). Clarified butter, traditionally made the bilona way. See A2 Gir cow ghee benefits.
- Curd (dadhi). Cultured milk, the base from which bilona ghee itself begins.
- Gaumutra (cow urine). Used in Ayurveda, pooja and natural farming — covered in gaumutra benefits and uses.
- Dung (gomaya). Used for cow dung cakes in havan and as the base of manure and vermicompost.
How panchagavya is used
In tradition, the five are sometimes combined into a single preparation — also called panchagavya — used for purification rituals and, in a different formulation, as a farm growth tonic. Individually, each product has its own long-standing role: milk and ghee in the kitchen and in Ayurveda, curd as everyday food, gaumutra and dung in farming and ritual. In natural farming, cow dung and gaumutra become jeevamrut, the microbial soil tonic at the core of chemical-free agriculture.
Why the indigenous cow is central
Panchagavya traditionally refers to the products of the desi cow — indigenous breeds like the Gir — not high-yield exotic or crossbred cattle. The reasoning runs through everything from the A2 protein in the milk to the microbial richness of the dung and gaumutra: a grass-fed indigenous cow, raised gently, gives products that industrial dairying cannot match. That is why panchagavya and a named desi herd go hand in hand.
